I mixed up the following and pulled off about a quarter to make my burger:

1 lb ground lamb
1 tbsp "finely chopped" shallots
2 minced garlic cloves
2 tsps ground cumin
1 tsp ground coriander
1 tsp ground cinnamon
1/4 tsp ground allspice
Sea salt and black pepper

My cooking book suggests that you also use cilantro, black olives, and lemon juice as dressing. I threw out my black olives in my latest refrigerator debacle, and didn't want to get cilantro, and forgot about the lemon juice.

If a cookbook tells you to get one tablespoon of finely chopped shallot, that cookbook is telling you to throw out most of a shallot because it (cookbook) thinks it's better than you.
