tuna sandwich (with nayonaise) on wheat, foreman-ed
powdered hot chocolate drink

2 slices soda bread

curried lentils with spinach
chocolate ice cream
2 cinnamon grahams

super easy, and you will love it:

the basics:

saute onions and garlic in curry powder and/or your favorite indian spices (cumin, coriander, turmeric, garam masala) for a few minutes.

toss in 1 cup lentils (i prefer split red lentils, but any will do) and about 2 and 3/4 cups liquid (water, broth, coconut milk, or some combination)

bring to a boil, then let simmer, covered for about 45 minutes. taste and season (with salt, pepper, more spices), then cook uncovered until lentils are mushy (~15 minutes). add more liquid if necessary.

extras:
i like adding veggies.
-harder veggies (like carrots) add at the beginning with the onions, and stir around a little.
-juicy veggies (can of diced tomatoes) add with the liquid and lentils so they can soak up the flavors.
-leafy greens (spinach) add toward the end because they will boil down quickly.

serve suggestions: with pita, pita chips, naan, or on a bed of lettuce.

my plug for lentils: they are the perfect poor man's food. super-cheap, easy to prepare deliciously, and full of nutrients and protein (more protein per serving than any bean except soy beans, and more protein per calorie than almost anything).
